Oyster Dome along Chuckanut Drive is one of our favorite hikes nearby, it's about 5 miles round trip with views of the Samish Bay. It's a moderate hike (depending on who you ask) but if a nature stroll is more your speed, Whatcom State Park or Larrabee State Park are beautiful options.
For those feeling adventurous, Bellingham is home to some incredible mountain biking at Galbraith Mountain. Transition Bike Company & Outpost does 4 hour demo's and you can ride directly to the top of Galbraith on Tower Road from the Outpost.
